Do you like chocolate pudding? What a question! Of course, you do, me too. But we know that there are better things than the chocolate pudding you can buy in the grocery store. It is full of sugar and chemicals. Take a look at the ingredients and you will come across some words that you’ve never heard of. This is always a bad indicator! The sad thing about this is that cocoa is so healthy with all its good fats. (Please, don’t be afraid of fats. What if I tell you that your body can’t work without fats but it can confidently go without carbs. Sorry, but that’s the truth. I will write more about that in another blogpost.) And that’s why I show you how to do a healhty chocolate chia pudding!
You might know that bitter chocolate is healthier than milk chocolate. Why? because the bitter chocolate contains more healthy cocoa and less sugar. Milk Chocolate has more sugar and less cocoa. And now I want to give you a recipe that contains the healthy cocoa powder but no refined sugar.
This recipe does its magic overnight if you do it my way. I like the chia seeds soaked in overnight so they are very big. If you prefer them a bit crunchier than use less milk and put them in the fridge for an hour. No matter what option you choose, it is very important that you soak them in milk or water. Don’t eat them raw. This can cause serious problems in your guts.
So, you pour the milk to the chia seeds and put it in the fridge overnight. Stir it at least once, maybe before you go to bed. There should be no milk left that is not absorbed by the chia seeds. Then add the tablespoon of cocoa powder and stir. Finally choose a sweetener and go for it! I always choose honey or agave syrup.
You can do this recipe vegan if you use agave syrup and a plant milk. I would recommend almond milk and xylitol to make it paleo.
In the picture you see an option to take it with you to school or work. I added some fruit and soy yoghurt and you’re good to go!
