Sometimes, we don’t want to eat a heavy meal. Vegetables are my go-to for a big meal that fills up but doesn’t make you tired and lethargic. The war between the low carb and the high carb fraction is really hot right now. Low carb never made sense to me until this summer, when I read so much about it. I finally came to the conclusion that a lot of carbs might not be the best option for everyone. In case you also prefer a low carb diet, I have an easy new recipe for you!
Do you need an oven dish? I found a good size, check it out if you like: Pyrex Glass Rectangular Roaster, 40x27cm
Preheat the oven at 360° F / 180 °C.
Chop the vegetables, the garlic and the onion. Put them into a bowl and sprinkle one tsp. of oil or pesto over it and stir. Add salt, pepper and herbs. Fill this mixture into a baking dish. Dice the feta cheese and put it on top with the seeds.
Pop it into the oven for 20-30 minutes, depending on how done you like your vegetables.
I used bell pepper and tomatoes because these are by far my favorite vegetables. Feel free to use whatever you love. This also works very well with broccoli, carrots or spinach. Just try it out!
If you do not really feel like low-carb this particular day you can add some source of carbohydrates like quinoa, potatoes or sweet potatoes. Just make sure you cooked them (accept for the sweet potatoes) before putting them into the oven.
